A cool project John.  Will most any type of wood work for this?  Better to do it when green?

Thanks Cal, best to do when green, I tried it dry and it was a struggle, traditionally this is a green woodworking project. The hatchet and knives glide through the wood when green, it truly is fun and relaxing. The cool thing is, with just a few tools you can walk the woods and cut yourself a small branch and have a seat and carve away.

Also Cal, I found that Eucalyptus is not the easiest to work with, so I would not suggest Euc.
