You could frame a french door that size with pocket screws.  If you check Amazon, there are pretty inexpensive PS systems.  If you want visibility through the door, I suggest safety glass.  Make the door, then measure the glass openings and go to a specialist shop.  As an alt:  ordinary glass, covered with clear adhesive shelf liner:  tough stuff, won't shatter, darn near unbreakable.  For that size door, I think 1x2 framing would work.

With a table saw, you could make the door frame corners bridle joints and make dados around the inside of the frame for the lauan plywood

How about a French door made of simple frames with tapestry fabric hung/stretched over them? Can get the look of both while minimizing the downsides of either.

 

Well, you are asking for options. And I'm known around here for taking that road less travelled... :D

That is a cool idea

As I look at the pics and think about the project I would go a much simpler route.

First, the 31" width would not accommodate a traditional style double door with each door containing two columns of glass or panels.  Two doors with one column each would work.

But, you could take a bifold door set, remove the center hinges and hinge those doors from the outside edges.  Bingo, solid french doors.  Light, cheap, the 31" width is fairly standard so you have a lot of different styles to choose from.  Dress them up any which way you choose.

I did this exact project after years of fighting the bifold door on our pantry.  And, pretty much the only tool you need is a screwdriver.
