Here is my contribution to the topic. 

Hanging a piece of 16' moulding to the ceiling with wife on one end and me on the other resulted in a sag in the center of 10-12" (or more).  My go to was to clamp a board to the ladder to support the center.  That was better but still had so much sag I couldn't get an accurate length.  So; a few pickle buckets, a cardboard box and a piece of 5/4x6 got me where I needed to be:)

No, I didn't try to climb the ladder:P
