The name carver sketched out the name the client wanted carved, more to be sure the spelling was right and to make sure the names would fit/look good on the boards.  The sketch was only a rough guideline, as when he was done the names always looked very professionally done.  He would sit on the side of the booth with a plastic guard around him so folks could watch him work, while his wife took orders at the front.  Boards were already made with a nice perimeter edge and keyhole slots on the back to make them easy to mount on a wall or door.  The carving was done, some quick drying lacquer or  Deft was applied on the face, they were placed on a rack to dry.  Buyers were told to come back 30 minutes later to pick up their finished name plaque.
