We all know that jack studs need to be cut 80" long so the headers will all be the same typical height off the floor but, how high is the overall height above the finished floor after raising the wall?

Tough to answer given the wide variety of finished floor types/materials

Prior to floor covering, 8' 3/4"???

The reason that a standard measurement is 80" for the jack studs and the 1 1/2" plate will make all headers fall at 81 1/2" high above the finished floor and make the windows and doors typical all around the house. However if one were to install carpet all the way to the door opening one might have to trim the bottom of the door to allow for good clearance between the carpet and door.
