April 7, 201214 yr Although we have some fairly nice knives, Mimi insists on imitating the "Ginsu Knife Chef". Soda cans, tree branches and floral wire don't stand a chance when she is around. I have finally managed to convince her to use the cutting board instead of the Formica counter top. Still, the knives do not stay sharp for any length of time. So, we now have two sets of knives and mine is hidden! This is the second knife I have made- well actually just added the handles. This is one of the new blades from Woodcraft (#153656). It has a serrated edge and the "granton" grind on the blade sides. The blade comes with cutlery rivets although I decided to use pins so it would more closely resemble the Chef's knife project I made some time back. The handle is African Blackwood from Woodcraft (#153762) The handle was was epoxied in place and the shaped using the belt sander and lathe mounted sanding pads up through 4000. Then buffed/polished using Hut PPP sticks both brown and white. The pins are from Jantz knife supplies.  I really do need to make a light box to improve the quality of my photographs. The Blackwood has beautiful subtle colorization but I couldn't capture it. Here they are together- I should have rebuffed the Chef's knife again. It is starting to show some wear. Thanks for looking. April 7, 201214 yr Author Thanks, Charles! That blade came from Jantz knives. I made it before Woodcraft started selling their blades and scales.Charles Nicholls said: Love the steel on that chef knife. Great job Lew! April 8, 201214 yr nice granton, nice handlesI've wondered of the best way to teach people not to abuse edges is to see if they can be convinced to try their hand at sharpening a damaged edge. Let 'em walk that mile.
April 8, 201214 yr Author Cliff- Thanks! So true about the sharpening thing. I think people either think the edges are indestructible or sharpening is a simple 10 second procedure.Cliff said:nice granton, nice handlesI've wondered of the best way to teach people not to abuse edges is to see if they can be convinced to try their hand at sharpening a damaged edge.
