Ok i need some help here what kind of  finish works well with White Ash?

Any of the Polys (water/oil) will protect the surface. It's a hard wood so if you want to add color a dye might penetrate more than a stain.

I recently had to renovate an antique ash headboard and I opted for wipe on poly.  For the past three years I apply wipe on poly with a clean piece of panty hose.  Does a great job.
